Alfonso Alvarez, our Director of Sustainable Studies, is both an highly experienced Chef and a certified Master Gardener. His additional studies in nutrition and food production create classes in which students not only learn advanced cooking techniques, but discover the symbiotic relationships between our modern methods of food production/agriculture, nutrition, food source sustainability, climate change and the science behind the cooking of all kinds of foods.
This class will also give the students an understanding of the foundation of cooking and the relationship between food, health and the environment.
Principles of physics and chemistry are incorporated as well to explain the process of food manipulation including how to flavor, season and preserve food. Every class is a hands-on exercise in creativity and the development of confidence through a subject we all love - food.
